Happy Fourth of July! For the first time in a couple of years, I was in America for Independence Day. It was so fun to celebrate with my family! My parents had the whole family over and we swam, ate, drank, and enjoyed spending time all together. It doesn’t happen much since I live out of the country.

These lactose free vanilla cupcakes are red, white, blue, and ready for your 4th of July party!

I helped my mom prep all the food for the day of. There was SO much of it, and it all looked so tasty. The problem was, most of it contained dairy, which I cannot eat. I wanted to make a dessert that was festive, dairy-free, and delicious. I wanted it to be enjoyable for my family, too! I took my all time favorite cake recipe (also used when I made the Cookie Dough Cake), and modified it to become dairy free. I used 1-to-1 subs of vegan alternatives.

I did the same with the icing. Don’t even get me started on the look of the icing. I wanted to create a really cool red, white, and blue look, but it didn’t turn out how I envisioned. It’s totally a mess, but what’re you going to do. It’s the taste that really matters! (:
