These no bake cookies are perfect for summer! They are gluten and dairy free. Using raw sugar will make them vegan, too!

It is bananas hot in Italy, so I am avoiding the oven like the plague. With no AC + 100 degree temperatures, I’m pretty sure the heat of the oven would make me keel over and die. To avoid death (and heat), the first recipe I thought of was no bake cookies, naturally. Though, with my newfound lactose intolerance, I found myself hunting for a dairy free alternative that still tasted good, sans chocolate.

This coconut + brown sugar alternative was so tasty! By some miracle, the combo tastes just like chocolate??? I don’t understand, maybe the heat has made me delusional. Anyway, they are great and you should try them!

Vegan No Bake Cookies

Ingredients:

  • 1 1/2 cup oats

  • 1/2 cup desiccated coconut

  • 3/4 cup brown

  • 1/4 cup coconut oil

  • 1/4 cup almond milk

  • 1/2 cup peanut butter

  • 1 tsp vanilla

Instructions:

  1. Line a baking tray with parchment paper. 

  2. In a large bowl, whisk together the oats and coconut. 

  3. In a small pot, stir together the brown sugar, coconut oil, and almond milk on medium heat. Bring to a low boil for 2-3 minutes.

  4. Remove the pot from the heat and add the peanut butter and vanilla. Stir until incorporated. 

  5. Pour mixture over the oats and coconut and stir well.

  6. Using a cookie scoop, scoop your cookies onto your pan.

  7. Pop in the fridge for 15 minutes to cool, then enjoy!
